Cooking unit converter
A cup of flour and a cup of sugar do not weigh the same, because the density differs. Pick the ingredient, the unit you start from and the amount, and the conversion accounts for density.
A US cup is 240 ml, a metric cup 250 ml, and in Australian recipes the tablespoon is 20 ml rather than 15. For flour, the figure assumes you fluff it and spoon it into the cup — scooped and packed, the same flour weighs 20% more.

Why is a scale better than a cup?
Because it removes the variation. The same cup of flour can weigh 120 to 150 g depending on how you fill it, and in baking that difference ruins the recipe.
Is an ounce in US recipes weight or volume?
In cooking recipes, nearly always weight: 1 oz = 28.35 g. The fluid ounce, used for liquids, is a volume unit, 29.57 ml.
