Layered Indian-style Dip with Smashed Cumin Potatoes
Ingredients and Preparation
The recipe calls for 750g of baby potatoes, flavored with two teaspoons of cumin seeds, two teaspoons of mustard seeds, and one teaspoon of garlic granules, all mixed with three tablespoons of vegetable oil. For the creamy layer, you need 350g of Greek yogurt, half a coarsely grated and squeezed cucumber, one finely grated garlic clove, two teaspoons of chaat masala, and a generous handful of chopped mint leaves, plus extra whole leaves for garnish. The sweet and tangy layer uses six tablespoons of mango chutney, preferably Geeta's brand, alongside three tablespoons of tamarind sauce. Finish the dish with Bombay mix, fresh chopped coriander, and two tablespoons of pomegranate seeds. If you are short on time, simply substitute the potatoes with crispy papadums.
Start by boiling the potatoes in a large pan of salted water for nine to ten minutes until easily pierced with a sharp knife, then drain and steam dry. Preheat your oven to 220C, or 200C fan, gas 7, and line a large baking tray with parchment paper. Mix the cumin seeds, mustard seeds, garlic granules, and oil in a large bowl, season well with salt and pepper, and toss the potatoes to coat.
Nutritional Information
Using the base of a mug or glass, gently smash each potato on the tray until it cracks open, leaving space between them. Bake for 30 to 35 minutes until deeply golden, crunchy, and crisp. Meanwhile, combine the yogurt, cucumber, garlic, chaat masala, and chopped mint, then spread this mixture evenly across a shallow serving dish. Spoon a smaller circle of mango chutney on top, followed by an even smaller circle of tamarind sauce. Garnish with the Bombay mix, coriander, whole mint leaves, and pomegranate seeds, then serve alongside the warm smashed potatoes for dipping.
